  2. Take 3 eggs, separated

  1. Preheat oven to 170C fan.
  2. Melt chocolate in bain marie. Mix well using whisk. Let it cool down.
  3. Once chocolate cools down, add egg yolks and mix well with a whisk
  4. Make meringue. Using electric whisk, or stand mixer, whisk egg whites till stiff peaks. It should not fall out of bowl when up-side-down.
  5. Add 1/3 of meringue to chocolate mixture, and mix well using whisk.
  6. Add remaining meringue, 1/3 at a time. Using spatula, fold meringue into mixture till combined.
  7. Pour mixture into cake pan. Bake in oven for 30mins.
  8. After 30mins, let it bake for 5-10mins if required. Let it cool before serving. Serve with ice cream if desired.
