In a heavy soup pot or Dutch oven over medium heat, heat oil. Add onion and garlic and cook until golden. Meanwhile, halve, peel, and scrape out seeds of the pumpkin. Place pumpkins on a cookie sheet and roast them until slightly shriveled and soft.

  1. Heat 1tsp butter in a pan and add chopped garlic. Saute till nearly burnt and golden brown. Transfer to a bowl.
  2. In a pressure cooker heat 1 tsp of butter and saute pumpkin and carrots till slightly brown. Add tomatoes and little water. Pressure cook to 2 whistles. Cool and blend in a blender.
  3. Transfer the paste to a saucepan and add 3 cups of water. Add salt and pepper and cook for few minutes.
  4. Add burnt garlic and cook for another 2 minutes. Serve garnished with coriander and lemon juice. Goes well with toasted bread.
