The ingredients needed to make Simple hummus:
  1. Get 150 g dried chickpeas
  2. Prepare Lemon juice (1 lemon or 4-6 tbsp bottled lemon juice)

  4. Make ready 2 tbsp oil (I use avocado or olive oil)
  5. Prepare 1-2 cloves or garlic or 1-2 tsp garlic puree

Though the recipe calls for adding two tablespoons of water, we like using chickpea water from the can for an extra boost of flavor. When your hummus is smooth and ready for serving, pour it into a bowl and grab a large spoon. Then, press the back of the spoon into the center of the hummus and rotate the bowl clockwise to create a small well. This hummus was super easy and so good!

Steps to make Simple hummus:
  1. Soak 150g of chickpeas in plenty of water overnight. These will swell considerably to make approximately 400g chickpeas once drained.
  2. Drain and rinse chickpeas. Put into pan and bring to the boil. Turn down the heat and simmer for 2 hours, making sure the water does not run dry. Alternatively cook them in a slow cooker for 8 hours on a low heat setting.
  3. Allow to cool then add to food processor alongside lemon juice, garlic, tahini paste and oil and blend until smooth. Alternatively you can mash with a fork if you prefer more texture as I do. Sprinkle over paprika if liked.
  4. Job done! Keeps well in the fridge for several days. Freezes well also. Defrost in fridge overnight.

I was skeptical about leaving out the tahini. I added a bit more garlic a tsp of black pepper a dash of tamari and a chopped up green onion to give it some of the flavors of my fave Moosewood recipe.
