Steps to make Kaddu Ka Raita:
- Wash, peel, cube and steam the Pumpkin until soft. It should be cooked but not mushy. I steam it in the microwave for 10-12 mins.
- Allow the steamed pumpkin too cool.
- Whip the chilled curd. Add sugar and salt to taste.
- Heat the mustard oil in a tadka pan, add the mustard seeds, asafoetida, green chillies, garlic and curry leaves. Allow it to crackle until the garlic turns golden brown.
- Add the pumpkin to the curd, gently mix and pour the sizzling tadka on top.
- Garnish with chopped fresh coriander and serve with a regular Indian meal.
