Spray more oil into the wok. Add the day old rice to the wok and re-add the bacon pieces. Toss everything together. Season with salt and pepper and add in the light soy sauce. Stir to combine.
  4. Once the fried egg has cooked through, remove from the heat. Stir fry the fried rice until the rice begins 'popping' in the hot wok. Remove from the heat.
  5. Add the rice to a bowl. Top with the fried egg. Add the greens of the spring onion on the side and drizzle sriracha sauce over the egg. Garnish with some Nigella seeds. Eat and enjoy!
