Stir in sweet potato and add curry paste; cook and stir for a few minutes to coat vegetables in paste. On a large sheet pan, place the diced sweet potatoes, olive oil, and all the spices. Toss until sweet potatoes are coated and place into the pre-heated oven. Let cool for a few minutes.
