  1. Take 1 packet thick Hokkien Noodles (440g)
  2. Prepare 1 tp corn starch + 1 - 2 tbsp water

  10. Take 1 tsp sesame oil
  11. Make ready 1 tsp chicken cube or chicken powder seasoning (to taste)
  12. Get 1/2 C water or chicken stock/pork stock
  13. Take 2 tsp sugar

Feel free to modify the recipe for health reasons or to suit your family needs. I don't use lard in my cooking and one can substitute the meat to mock meat or simply use vegetables. Charlie is the name I have given to my All Purpose Chinese Stir Fry Sauce. I was really, really torn about which recipe to share.

Steps to make Hokkien Noodles:
  1. There are variations of hokkien noodle. Choose the thick one. Soak noodles in boiling water to soften. Drain and set aside.
  2. Heat wok. Pour in oil (or lard if using). Add garlic then meat slices, cook for 2 to 3 mins.
  3. In separate bowl, mix all the sauces- cooking caramel (if using), dark soy sauce, sesame oil, ground pepper. Pour this mixture into the wok. Add water, sugar and chicken cube (if needed). Stir. Then add noodle and cut green vegies of your choice. Next Add corn starch mixture. Let it simmer again till gravy thickens. Adjust taste to your liking.
  4. Serve hot.

I decided to go with the Spicy Hokkien Noodles. Preparing the Hokkien prawn soup stock from scratch is the most tedious part of the recipe but it is rewarding. If you are busy, you can substitute with store-bought chicken stock. Hokkien noodles are sometimes called by their appearance as yellow noodles. An authentic plate of KL Hokkien mee uses a specific black sauce labeled as 'thick caramel soy sauce'.
