- Make ready 700 grams finely grated courgettes
- Make ready 3 eggs

- Make ready 1/2 bunch finely chopped curly parsley
- Take 1/2 bunch finely chopped dill

Stir in the seasonings and remove from heat. Allow to cool before assembling the tart. Place the zucchini slices in concentric circles on the bottom of the pan. A couple of months ago I shared a recipe for Savory Dough, it makes enough for a two pie crust, so I decided to use one of them for this Rustic Zucchini Pie.
Instructions to make Courgettes (Zucchini) pie:
- Preheat the oven at 175oC. Grated courgettes should be slightly salted (crumbled feta will be added later on) and left for 15 minutes in a colander to drain any excess water.
- Brush an oval glass dish eith the olive oil and scatter evenly on all surface some breadcrumbs.
- Mix together the finely sliced dill, curled parsley and spring onions with the dried mint, crumbled feta, cottage cheese, eggs, the remaining breadcrumbs and pepper.
- Squeeze grated courgettes to drain any excess water. Mix with the rest of ingredients. Pour the mixture in the dish and drizzle with the remaining olive oil. Bake for 45 minutes or until golden.
- This recipe is gluten free if breadcrumbs are omitted or replaced by gluten free breadcrumbs. :-)
This is the perfect savory pie to make when you have an overload of zucchini in the garden, or just pick some up at the farmer's market or grocery store. Feel free to mix and match veggies and cheese. You can really make this delicious crustless zucchini pie your own! To freeze individual slices: cover them in plastic wrap and tinfoil, and then place them into airtight containers or ziploc bags in the freezer. Put the zucchini and onion in a large bowl.
