  11. Take 1 tsp Italian seasoning
  12. Get 1 dash Crushed red pepper flakes

  14. Take 3 tbsp Butter

This Sausage Tortellini Soup is a tomato-based soup loaded with vegetables, Italian sausage and cheese tortellini. It's the perfect cold weather soup. Instructions to make Sausage Soup:
  1. Cook sausage in a skillet then set aside. Put either on a paper towel or something to avoid getting a lot of the grease in the soup, some is fine but not all of it
  2. Dice the onion then, in a stock pot, sauté onion with butter till they are soft and tender. About 10min
  3. Add garlic and stir for about 2more min
  4. Add the whole cans of diced tomatoes (juice and all) then stir and bring to a simmer for about 3min. Also add the salt, pepper, parsley, and Italian seasoning
  5. Add the wine, beef stock, and beef broth and bring to a boil uncovered
  6. Once boiling, add the zucchini and sausage. Bring down to a simmer and simmer for 20min uncovered
  7. Add the bow tie pasta for 11min or until pasta is done cooking

I add escarole to the soup to add greens for a healthier diet. Now this soup is packed with spicy Italian sausage, potatoes and hearty spinach - a complete meal in a single bowl. The only downside of this recipe is that the leftovers were not enough. Tasty & filling soup with a very subtle aniseed flavor. I omitted the olives as I don't care for them and added a little salt to make up for their absence.
