Watalappam (also called watalappan or vattalappam) (Sinhala: වටලප්පන් Tamil: வாட்டபாலம்) is a coconut custard pudding made of coconut milk or condensed milk, jaggery, cashew nuts, eggs, various spices, including cardamom, cloves, and nutmeg, and sometimes thick pandan juice or grated vanilla pods.

The ingredients needed to make Wattalapam:
  1. Prepare 300 g brown sugar make a syrup
  2. Prepare 1 tin condensed milk
  3. Take 6 eggs
  4. Prepare pods Cardamom
  5. Get Raisins and cashew for topping

This is a lighter version of the traditional dessert that is slightly creamier, smoother, and a bit less sweet. Put the jaggery or palm sugar and water in a saucepan and heat, stirring, until the sugar dissolves. Sri Lankan watalappan A nonstick bowl is also good for making this watalappan. You can even do this in a steamer, even then wrap the bowl it with a aluminu.

Instructions to make Wattalapam:
  1. First heat condensed milk with 1 cup water plus sugar and make sure sugar dissolves.
  2. Now leave it aside to cool and whisk the eggs in a steam proof bowl with a tsp vanilla essence and add the sugar mixture to the egg mixture
  3. Add cardamon and cover with foil and steam it for 40-50 min or until a fork comes out clean. Decorate with nuts and ready to serve

Wattalapam is a very traditional Sri Lankan dessert. It's uses some of the best resources from the island such as coconut milk and jaggery made out of kitul (treacle) from the palm or coconut tree. Wattalapam is basically Sri Lanka's version of a flan or creme brulee. Vattalappam is a tasty dessert, also it is traditional and mouth watering Srilankan recipe. I never planned to write a post on Watalappan.
