  3. Add 1 tbsp butter, sauté onion and cook until softened, about 5 minutes. Add taco seasoning packet, enchilada sauce, black beans and bring mixture to a simmer. Turn off heat.
  4. Spread enchilada sauce mixture over baked cauliflower crust then top with remaining cheddar cheese. Bake until the cheese has melted and the crust is crispy, about 15 minutes more.
  5. Optional Add-ons. Top with sliced 4 oz filet or egg.
