These delicious black bean and corn vegan burritos are everything. They have so much flavor and texture going on, it. This was very nice, I'm a newbie vegan and I didn't miss the meat or dairy I would usually have (surf and turf burrito from chilangos with steak and prawn was my fav!!!) Easy and quick to make,I had it with walnuts instead of hazelnuts,as that was what I had in and watercress instead of spinach but was delicious!   1. Open 1 can of Refried beans. mix Refried beans with 1/4 cup of salsa of choice. Mix in taco seasoning.

  3. Spray shallow pan with non-stick cooking spray and add burritos into pan fold facing down. Cook at 350 for 10-12 min.
  4. Plate burritos and add optional toppings like: Avacado, hot sauce, diced jalapeno, salsa, etc.

This vegan burrito is chock full of healthy veggies like black beans, bell peppers, onions, and avocado. Alex and I were careful not to go overboard on this one prep-wise. Sometimes meals like this one can take quite a while to prepare all the components. The base recipe has just enough going on flavor and texture-wise to be perfectly delicious. Compared to a meaty burrito filled with dairy-based sour cream and cheese, our vegan burrito is much lower in fat (especially saturated fat which can cause a whole host of health issues), higher in fiber and lower in calories.
