- Get 1 Cup finely shredded Mexican cheese
- Prepare 1 Cup beer (I use Budweiser)
Rinse beans and place in a large bowl. Borracho beans, or drunken beans, are a popular dish in Mexico and Southern Texas. They are made with pinto beans that are cooked in Mexican beer. This bean recipe is meant to be a little soupy.
Instructions to make Borachos "Drunken Beans":
- Add pinto beans to a large pot and cover with cool water (at least a few inches above the beans as they will expand). Soak for at least 6 hours or overnight* uncovered at room temperature.
- Once beans are soaked, drain and set aside.
- Next add drained beans and cover with water about 2 inches over the top, as the beans will expand while cooking. Add the chopped garlic.
- Set heat to low or medium-low and simmer for 40-50 minutes
- Brown ground beef and onion.
- Combine all ingredients to the cooked beans except for shredded cheese and garnish items.
- Cook for an additional 35 minutes on med-low heat.
- Add the cheese and cover long enough for the cheese to melt.
- To finish add a dollop of sour cream to the individual servings along with the fresh cut tomatoes.
