Heat the olive oil in a pan at high heat until it starts smoking lightly. Add the peppers and cook, tossing occasionally, until the skin starts to blister and soften. Remove the peppers and place them on a plate.
Steps to make Padron Pepper and Mushroom Kinpira:
- Make small slits in the padron pepper. Slice the mushrooms.
- Heat the oil in a pan and saute the pepper and mushroom on medium heat. Once the pepper turns soft brown in some areas, season with soy sauce and mirin.
- Sprinkle Shichimi upon serving.
When the air above the oil starts to shimmer and the pan is too hot to comfortably hold your hand over, add the padron peppers. Fry and toss the porcini mushrooms until they are browned. Remove the garlic clove and lay the mushroom and shallots on the serving plate. Add the Iberico chop and Padron peppers to the plate, sprinkling a little salt on the peppers. You can also garnish with micro herbs such as red amaranth.
