- Prepare lemon pepper seasoning

- Take 1 cup quinoa
- Make ready 1/2 cup coconut flakes
- Take 1 clove garlic
- Get 1 handful almonds sliced
- Take flat leaf parsley
- Prepare 1 avocado
- Get 1 lemon

- Start with the Quinoa
- Add 1 tbl coconut oil to a medium sized pot and turn the heat to med-high
- Add the quinoa and toast until it pops and browns lightly
- Add garlic and stir
- Add 2 cups water and bring to boil. Then turn the heat down to low and cover. Let quinoa absorb water for about 10 - 15 mins, then remove lid.
- Now for the Tilapia. You can do this while the quinoa is finishing.
- Heat a pan with about 1 tbl coconut oil to med-high.
- Pat the fish dry and roll the fish in lemon pepper seasoning (I buy mine from DeKalb farmers market)
- When the oil is hot, add the fish and allow to sear for about 3 minutes each side.
- Add salt and pepper to taste to the quinoa. Also mix in almonds.
- Cut slices of avocado and lemon for serving with the quinoa and fish
- Sprinkle parsley over everything… it's pretty that way!
