- Clean the potatoes first by washing them cleanly, then you chop them into pieces. Set aside. Heat the oil in a pan, then deep fry the potatoes until golden brown, Remove and drain after cooking.
- Reheat the pan add about 3 tablespoon oil and then saute the ground spices with galangal, kaffir lime leaves and Saute all the ingredients until fragrant.
- Add the potatoes in and then stir all the ingredients until they are completely even. Add sugar, salt and tamarind juice then stir until the spices are mixed evenly with the potatoes in the pan. Taste your cooking and add food flavoring if you feel something is lacking. If all the ingredients and seasonings are felt right, you can turn off the heat and lift the dish to the serving dish.
- Serve while still warm. Serve with warm rice to make it more delicious.
