Transfer pork loin to prepared baking sheet, fat-layer side up. Brush remaining honey mixture over the pork loin. Mix the rice and sugar snap peas with the mango, sesame oil, soy sauce and mirin. Separate the leaves of the gem lettuce and spoon a little rice mixture into each one.

  1. Prep all your ingredients, cut your pork into small dice if you use pork loin. Think sliced shallots, cut mango into small dice size. Thin slice lemongrass. Grate garlic and ginger. Crushed some cashew nuts.
  2. In a small mixing bowl, add your pork then add soysauce, grated ginger, garlic, lemon grass, mix them all together and marinade the pork for 5 min.
  3. On a medium heat, add a little bit of cooking oil, then shallots and stir fry it until softened. Add your pork or protein mix well until it cooked. Add little bit of soy, lime and honey and turn heat off. You can add some end bit of the lettuce cups too so nothing goes to waste.
  4. In a small bowl add mango in with a little bit of lime juice, coriander, radishes and chilli then mix well.
