  1. Get Potsticker dough
  2. Take 2 1/2 cups flour
  3. Prepare 1 cup hot water
  4. Take 1/4 tsp salt
  5. Prepare For the filling (customisable)
  6. Prepare 2 1/2 cups meat (any) chopped small or minced
  7. Make ready Red cabbage (amount can be customised)
  8. Take 3 tbsp grated ginger
  9. Take 3 garlic cloves minced
  10. Prepare Seasoning (I used what I had) all purpose, chilli powder
  11. Prepare Black pepper, Maggi liquid, cinnamon, salt
  12. Get Green chilli's
  13. Get Onion

Then wash the cabbage twice to remove extra salt. Traditionally, pot stickers are made of minced meat and an assortment of savory fillings: mushroom, ginger, garlic, onions, and cabbage. They have fairly thick, often homemade wrappers that crisp up nicely on the outside while staying soft and juicy inside. Trim and finely slice the spring onions, remove and discard the tatty outer cabbage leaves, then shred very finely.

Instructions to make Meat and cabbage potstickers:
  1. Marinate the meat in the seasonings, garlic, chilli and onion
  2. Combine the flour salt and hot water. It may take a while to come together but keep mixing.
  3. When combined knead the dough on a surface until elastic.
  4. Cover with clingfilm and rest for around half an hour
  5. Chop cabbage, more onion, garlic and ginger and green chilli and place into the meat bowl.
  6. Add oil to a pan and put to high heat. Place the marinated meat and cabbage mix in the pan for a short amount of time. Don't over cook.
  7. Remove from the pan and put into a bowl to cool slightly
  8. Take the dough and cut into quarters. Then roll out and cut each quarter into sixths. Cover the remaining dough until you are using because it dries out fast.
  9. Roll into circle shapes and place a small amount of filling in the middle. Make creases with your fingers and pinch together. Wet your fingers if you need to.
  10. Heat up oil in a frying pan that has a lid. Make sure the pan in pre heated
  11. Add the potstickers to the pan and cook for about 2 or 3 minutes or until the bottom is golden brown.
  12. Carefully add enough water to cover the bottom of the pan and Place a lid on top.
  13. Cook until dumplings are soft. If the water has run out and it's not ready add more water.
  14. Serve with a nice sauce. I had a vinegary sweet chilli sauce.

Warning: this recipe is slightly different from the traditional recipes you'll see. It consists of beef instead of pork and carrot instead of cabbage (I'll be sharing a more traditional version in the next few months). Growing up in a very Korean household, we had homemade potstickers at least once a week - steamed, fried, boiled, kimchi filling, mushroom filling, shrimp filling…you name it. Perhaps you know them as potstickers, maybe momos, dim sum, dumplings, there are many names for them and they make for some good eating. It's time to turn this potstickers into a Keto delight.
