  1. Make ready 4 Potato
  2. Get 3/4 cup Cheese
  3. Take 1/4 cup Sweet corn cooked
  4. Get 1/2 cup Coriander leaves very finely chopped

  6. Take As needed Salt
  7. Prepare 2 pcs Green chilli – very finely chopped

  10. Make ready 3 tbsp All purpose flour/ Maida
  11. Get 1/4 cup Milk
  12. Make ready 3/4 cup Bread crumbs

These attractive, golden-coloured Corn Croquettes are perfect to serve at parties as they have a brilliant flavour and texture, and are handily sized too. You will love the mild sweetness of corn, the succulent softness of cooked rice and the perky flavour of green chillies, which play out wonderfully well in this snack. Serve the Corn Croquettes as a starter, as finger food at a cocktail. I love the creamy interior and the crispy exterior which is the character of a croquettes.

Instructions to make Corn Croquettes:
  1. Peel, cube the potatoes. I used frozen corn and microwaved to cook it. You can choose your method to cook, but make sure it does not retain any water.
  2. Boil water, add the cubed potato, salt and cook until soft. Do not overcook. Otherwise it will retain water.
  3. Transfer to mixing bowl and mash it well.
  4. Add cooked corn, coriander leaves, green chilli, pepper powder, Italian herbs, cheese, required salt and mix well.
  5. Divide into 12 equal size balls, shape into cylinders or any desired shapes.
  6. Mix maida in milk to make a batter, thick enough to coat. Keep corn flour and bread crumbs ready in separate bowls/ tray. Coat each rolled croquette in corn flour first.
  7. Dip it in maida. Roll it in bread crumbs. Use both hands, to handle wet and dry ingredients separately for less mess.
  8. Repeat to finish all. Heat oil and drop few at a time. Cook until golden.
  9. Turn once or twice for even browning. Drain over paper towel.
