  2. Add eggs & beat till well incorporated. Add flour and baking powder, alternating with milk & finishing with the flour. Batter should look like buttercream icing in consistency, not watery but thick enough to be piped.
  3. Preheat oven, & cover a baking tray with parchment paper, or grease with butter & slightly cover with flour.
  4. Transfer batter to a piping bag, cut the tip if using a disposable bag. Pipe out the batter in circles, giving at least 1cm space between each discs to give space for spreading. Bake in a preheated oven for about 10minutes. These cookies burn easily so be sure to keep an eye on them.
  5. Once set, bring out of the oven & allow to cool completely before removing from tray.
  6. You can sandwich cookies with butter cream or meringue frosting, I used butter cream frosting. I have a recipe for my butter cream frosting in my vanilla & chocolate cake recipe.
  7. You can also add chocolate chips to your batter like I did here, but instead of piping, drop batter onto baking tray using a small spoon.
