  5. Bring to slow simmer, stir often so rice does not stick. I usually cook it for a hour. You may need to add additional water while cooking.
  6. Salt and pepper to your liking.

This is very close to my mom's recipe with a few verations. First my mom does not use chic stock, corn, or olives. This Spanish rice recipe is delicious when served with chicken tortilla soup, taco bowls, slow cooker whole chicken, or fajitas. Miss Piggy was my neighbor growing up.
