  2. Prepare 10 small shallots (150grams)

  4. Make ready 10 dried chillies- deseeded and soak in boiling water to soften, squeeze water off before adding in the blender

  6. Take 2 cloves garlic
  7. Take 2 inches fresh ginger (15grams)
  8. Take 2 stalks lemon grass (20 grams)
  9. Get 1/2 cup water (125ml)

  11. Prepare 1 whole chicken - cut into 8 to 10 pieces (1.2kg chicken)
  12. Get 4 pieces lime leaves (optional)
  13. Take 250 ml coconut milk
  14. Prepare 1 tbsp. tamarind juice
  15. Take 1 medium white onion, sliced into rounds
  16. Make ready 1/3 cup vegetable oil
  17. Prepare to taste Salt
Steps to make Chicken Sambal:
  1. Blend Spice A ingredients to a fine paste and set aside. Heat oil in a wok and fry Spice A. Fry and keep adding water a little bit at a time and cook till slightly dry and oil separates from the paste. This means the chillies are now fully cooked. The whole process will takes about 45 minutes.
  2. Add in the coconut milk together with the tamarind juice and leave to boil for 5 minutes. Add in the sliced turmeric leaves, salt and chicken pieces. Simmer for further 20 minutes or till chicken are fully cooked.
  3. Now add in the onion rounds, stir to mix and turn the heat off.
  4. Garnish with crispy shallots just before serving.
