- Prepare 4 cloves garlic, sliced (add as many as you prefer. I like mine really garlicky so I add about 7-8 cloves)
- Make ready 300 ml white wine
- Get 1 tbsp fresh lemon juice (Again add as to your own taste)
- Get 1 tsp black pepper
- Get 1 pinch salt
- Make ready 800 grams chicken breasts, (About 6 pieces)
- Prepare 2 bay leaves cut in half
- Take 4 tbsp olive oil
- Make ready 1 tbsp butter
Instructions to make Extra Garlicky Chicken:
- I like to have the chicken breasts sliced thinly so if you prefer cut the chicken breasts to about half a centimetre length ways each piece you cut otherwise leave them as they are. Once you have done that place in a large bowl and set aside ready to be marinated.
- To the chicken add the wine, garlic, salt, pepper, bay leaves and lemon juice and mix it all together. Set it in the fridge for about 3-4 hours in the marinade.
- Once ready to cook, separate the chicken pieces from the garlic and marinade, and reserve the marinade to be used later.
- In a large non-stick frying pan heat the olive oil and butter on a medium heat.
- Once heated add the chicken pieces. Cook for about 10-15 minutes if thinly sliced (add an extra 5-10 minutes if thicker), turning over after every 5 minutes.
- If its starting to dry add some more olive oil and butter to the pan.
- I normally have to do two batches in the pan as it doesn't all fit in one. so I normally add the garlic pieces to cook on the second batch and cook them for about 15 minutes.
- Add all the chicken pieces back into the pan and add the rest of the marinade and cook for a further 5-8 minutes.
- Let it rest for 5 minutes before serving.
