The ingredients needed to make Strawberry preserves:
  1. Get 1 lb strawberry
  2. Get 2/3 to 1.5 cup of sugar (i prefer brown sugar in the raw)
  3. Prepare 2 tbsp lemon juice

Freezer Test - Put a few small plates in the freezer. Near the end of the cooking time, begin to test. Drop a dab of jam on an ice cold plate. In a medium saucepan over medium high heat, combine lemon juice and sugar.

Steps to make Strawberry preserves:
  1. Wash and stem/hull the strawberries. (I prefer to use the smaller ones)
  2. Combine the strawberries, lemon juice and sugar in a thick bottomed pot. Cover and boil it over medium to med low heat for 12 to 15 minutes.
  3. Open and mash the strawberries with a potato masher or a wooden spoon in the pot. Lower the heat to low and let it sizzle for 30 minutes until it bubbly and turns shiny  jelly but still runny. Stir and mash the strawberries from time to time to keep the jam from burning.
  4. Remove from the heat and let cool. Put it into a STERILE small glass jar. Serve when desired

Heat figs, sugar, and strawberry gelatin together in a saucepan over medium-high heat; bring to a rolling boil. Set the pot over medium heat and bring the strawberry mixture to a gentle boil. Remove the pot from the heat. Our easiest strawberry jam recipe without a pectin. The jam is soft, spreadable, delicious, and great for first-timers or seasoned cooks.
